This is my son’s favorite recipe (minus the chocolate chips). When I make this I make a batch for him first and then add the chocolate chips and bake the rest. I don’t know why he doesn’t like the chocolate chips in them, but personally I think it’s the only way to eat these delicious cookies. I have modified a recipe from the Food Network, you can find the original recipe here. My version is below.
Pumpkin Chocolate Chip Cookies
1 C butter
1 C white sugar
1 C brown sugar
Cream together until light and fluffy…then add
2 large eggs one at a time
1 C pumpkin puree
Set bowl aside
In a separate bowl combine:
3 C flour
2 tsp baking soda
1/2 tsp salt
1 1/2 tsp cinnamon
1/2 tsp ginger
1/4 tsp nutmeg
1/4 tsp cloves
1 tsp vanilla (I like vanilla powder if you can find it, if not vanilla extract is ok)
Add the dry ingredients to the wet and combine. Now if you are like my son…you can begin baking your cookies, if you are like me and want the chocolate. Add in one bag of good dark chocolate chips. Trust me, dark chocolate is the way to go. If you don’t like dark chocolate then I suggest 1/2 and 1/2 – half a bag of milk chocolate and half a bag of semi sweet. Give it a try. I know you’ll like it.
Bake 350 F for 10-12 minutes or until done. I recommend eating them immediately.
