It’s October! What a great time of year. I love fall and all things associated with it. I think one of my favorite things is all the delicious food. I have decided to share a new recipe every day this month. Some will be my family favorites others will be recipes from my favorite online blogs. Be sure to check back…This is the perfect way to start the day on a cool fall morning.
Pumpkin Waffles with Buttermilk Syrup
Waffles:
2 C Flour
1/4 tsp salt
1 tsp Baking Powder
1 tsp Baking Soda
2 TBSP brown sugar
2 tsp cinnamon
Combine in a bowl – set aside
2 eggs
1 12oz can evaporated milk
1/2 C canned pumpkin
2 TBSP melted butter
1 tsp vanilla
Mix together add to dry ingredients
Cook in a waffle iron
Syrup:
1 1/2 C Sugar
3/4 C buttermilk
1/2 C butter
2 TBSP light corn syrup
1 tsp baking soda
2 tsp vanilla
1/2 – 1 tsp cinnamon (to taste is optional – I highly recommend!)
Bring all ingredients (except the baking soda) to a boil…then add baking soda – it will foam up. Stir well and serve. Best when hot.
